White pepper is less aromatic than black pepper, but very hot and should be used in moderation. It goes well with fish, light poultry, vegetables, rice and noodles, as well as with all light sauces and soups.

White pepper is grown in Kerala in India, Indonesia, Malaysia, China and Brazil. To grow white pepper, sufficient fresh running water must be available. Indonesia is the largest producer of white pepper and the Bangka Island pepper is considered the best.
